Does anyone have any pictures of what the horses look in on the ship for the races? Can you win something for best decortive horse and how exactly do you win the races? Do they roll dice or something?

They are stick horses. A broomstick with a wooden head. I believe they have a best dressed award for the horse. Yes, they use dice to advance the horses on the track. There are six horses and when they roll your number, your horse advances one space.
