We are about to depart on a 14 day cruise.Would it be in order to ask at security when boarding to ask could our wine be taken direct to the Wine Waiter for storage so that we can consume in the dining room each evening?

Yes. We did that on Ocean Princess and on Celebrity's Mercury. Of course we kept a few bottles for room consumption (no corkage fee in the room; 12$ corkage fee in dining room, if I remember correctly).
