Tender Time/Ship Time (Grand Cayman)

We are going on the Carnival Freedom in June, so I wonder about the time difference between the ship and the island.

 

How early can you usually get off the ship and get a tender in Grand Cayman? Does anyone know what time the shops open on the island?

I was in the Cayman Islands last week on a cruise. We arrived around 7 and after the shore excursions were taken off we were allowed to tender to the pier. I think we arrived on shore around 8am and all the shops were open when we got there.
