Depends on what you like, but you could make your way up to the inner harbour and just stroll around, take in the beautiful flowers etc. You could do a tour to the flower gardens. Horse carriage ride around town? There are a few things you can do.

Horse drawn carriage ride, Royal BC Museum, Maritime Museum, shopping on Government St., a ride on Harbour Ferries or a visit to Chinatown.
