Need advice for wheat/gluten free eating

Hi everyone-

 

My friend's daughter has "passed?" 2 of the 3 tests for celiac disease and is to have a scope done to make the final diagnosis soon. I told her that I'd ask around the groups for recipes and guidance since I know that a few of you live wheat and gluten free. She's really worried because her DD is very picky. she doesnt' even like chocolate!!!! :eek:

 

Anyway, all my recipes use whole wheat but not corn. She'll need the opposite. Also, I got lucky because once my DD was diagnosed with food allergies and started feeling better she started eating a broad range of food. Any kid friendly recipes (she's almost 8) or advice would be greatly appreciated.

my stepfather has to follow a gluten-free diet. he loves brown rice pasta, spelt pasta, rice noodles, etc.

 

my mom makes a kind of lasagna type casserole with tostitos chips. cook 1 lb. beef/meatloaf mix in a pan, drain, add spag. sauce and heat through. layer in casserole w/ broken up tostitos chips and ricotta/mozz./egg mixture. it's my favorite dinner :)

 

polenta is a great idea too. you can make it out of cornmeal or buy the premade tubes-we make mini-pizzas on those. speaking of pizza, if she can find spelt pizza crust it's delicious.

 

treats are hard to make but rice krispie treats and no-bake peanut butter balls are wheat-free. natural food stores and larger grocery stores have gluten-free products and baking mixes.

 

there is really quite a bit of gluten-free stuff out there! plus search the web and you'll find plenty of resources . . .

Thanks so much for all the ideas! I'll pass them on to my friend. Luckily we have a couple of Wild Oats groceries nearby to stock up on wheat free foods. I have a hard time coming up with suggestions for her though because my youngest DD is allergic to corn so we have programmed our recipe repertoire to avoid it.

wow- you're hearing more and more about that. My ex-fiance had celiac sprue. Man he was a pain to cook for! thankfully- he was a mama's boy and she cooked for him most of the time (we were only 18/19 at the time)

 

she made applesauce cakes- those were good. and most of the time he knew what to get for himself (and he cooked) so we'd go to the healthfood store and get his bread and pasta.

Yes, it seems like it's diagnosed more and more. We've found out the same thing about corn allergies since my youngest was diagnosed with that. People these days are eating so much highly processed corn without even knowing it until there's a problem. Then they realize that their yogurt is full of corn starch and their sausage (along with everything else in the grocery) is full of corn syrup, high fructose corn syrup, corn syrup solids... You get the idea. I certainly had no idea until I had to start watching for it. It's amazing what we, the American food consumers, have no idea what's really in our food that we eat every day. Very scary.

deb- I haven't forgotten about this but they put my grandmother in the hospital this week and it's been insane. I do plan to e-mail you though.

 

Michelle- Thanks for all the sites! Wow! I only have to avoid corn, eggs, peanuts and peas with my daughter. It must be a real challenge to avoid protein. You must be very creative with recipes. How old is your daughter? My allergic one just turned 5. It was really rough at first because she was a very picky eater but once she started realizing that she felt so much better she started being more adventurous. Now she'll actually eat 3 different green vegetables! That's big for her! :rolleyes:

The disease my daughter has is not an easy one to manage. However she doesn't eat anything by mouth. She has a tube in her tummy that she gets a special formula through. She has an inborn anarexia. Her body doesn't know what it is like to be hungry. She just turned 6 in January and is my little angel. You would not know by looking at her that there is anything going on. However there is A LOT! There are other diseases very similar to my daughters that do eat however. That is why I know the web sites. We are all part of a network and I hear about them all the time. I hope they help. Michelle- I did some work at a developmental school where where several children had to be tubefed. That IS alot to manage for sure. Thank you so much for all the information. My friend is still waiting for them to schedule the scope so they can make a final diagnosis. I'm afraid I'd be alot more pushy than she is being. :D I have learned from past experience with my crohn's and DD's food allergies to not let a wishywashy doctor put me off. That almost had me dead at 19. Now I warn every new doctor I have that I'm going to question everything and here's why... Luckily I only ever had one get offended and he didn't get to be my doctor for very long.
