Fishing excursion

My DH had his heart set on the fly fishing/bone fish excursion from Celebrity, but when we received our documents, it was not listed. The only thing I can think of is that we leave at 1:00 & there is not enough time. Does anyone know of a private fishing tour that does not run $350 & up? Thanks
