Best "Special Meal" on the Nieuw Amsterdam

We will be on the NA for 14 days in January, and were looking forward to doing one over-the-top meal in addition to Tamarind and the Pinnacle Grill. We had originally planned to do the Master Chef's Room with wine pairing, but after seeing the sample menu here I'm afraid it may be a little too adventurous for us. I'm just not sure about goose liver or veal.

 

I was thinking of doing the Le Cirque night instead, but again was concerned about the limited choices and lack of wine pairings.

 

Are either of these special enough to do, or should we just splurge on wine and eat in Pinnacle twice?

I'll pass on the liver, but veal is very tender, flavorful beef.

If I were choosing, I'd go up on the wine, makes everything taste better.:p
