Although, I'm not familiar with other lines except Princess in regards to this. On Princess, I've seen them make great accomodations for wheelchair passengers. Once you get off in Grand Cayman, you can explore the area right by the port. Lots of shopping and restaurants. However, if I was you, I would ask some of the companies that are in stationed in the immediate area where you disembark if they have some tours that are wheelchair friendly. You might find some good options. I know the challenges you face as my mom was wheelchair bound in her last years and I, then, became more aware of this issue and what the options were.
