If you purchase a wine package on the ship, do you get all 4-5 bottles sent to your room? or do they hold them in the dining room and charge you the corkage fee each time they open a bottle.

No charge for bottles purchased thru the ship. You will get 'tickets' for the bottles purchased and will get to choose which one you want - when you want it. I understand you can get this in the dining room or at any bar (if you want to take the bottle with you or to your cabin?).
