Miracle Excursions for people who are disabled

I was wondering if anyone out there could be of some help. I have my parents booked on the Miracle leaving Tampa on 4/24. My mom is slightly disabled in that she usually does not use a cane or wheelchair (but has in the past), however she has difficulty with a large amount of walking. I wanted to book them each an excursion as a gift (but not the same one since my dad loves active "adventures".) Can anyone give a suggestion for any of the ports: Grand Cayman, Belize, Costa Maya and Cozumel? I am thinking I am going to get my dad the cave/tubing excursion in Belize so a Belize alternative would be greatly appreciated - but any suggestions would be helpful. Oh and she does NOT like to snorkel but loves the beach, pools, bus tours, etc.
