You save the 15% gratuity by preordering before the cruise by phone through the Bon Voyage department of Carnival. Prices recently went up. If you order through Bon Voyage, you avoid paying the 15% gratuity and you don't have to select the actual wines till you get on board. However, you can buy this one you get onboard. If you wait until you are out of port you aren't taxed - like the soda card. I am going by my verrrrry bad memory, so perhaps someone can confirm that.
