Other varieties in excursions for Ocho Rios?

We are sailing on the Carnival Valor on March 25, 2012 and one of the ports is Ocho Rios. We don't really like any of the excursions that Carnival has on their site. Not really looking to do the Dunn River Falls.

 

Does anyone have any other suggestions on what to do with excursions, just a beach to hang out at, drink at the port (is the port good enough to do this), or just hang out on the ship?

 

How about an Appleton Estates rum tour, any reliable private tour operators where we can do this? Any ideas would be helpful than what we are doing right now!

Have you considered hiring a taxi for the day? I went with a party of 8 and we hired a driver for $70 for the day. Should this be something you are interested in check around the boards for recommended tour guides or taxi businesses.
