Panama Canal question western route

This will be our first Celebrity cruise together on the Infinity in April and do have some questions.

 

One of our stops is San Diego, does anyone know if the ship when travelling north, does it hug the coast line to see San Francisco/ Golden Gate Bridge?

No, you have to sail into San Francisco Bay to see any of that, and since you're not stopping in SF, you won't see the bridge. You'll probably be at least 3 miles from the coast, in order to maintain international waters.
