Need recommendations for our day in St Thomas

We will be in St. Thomas in mid-March and there will be 3 other ships in port on that particular day (approx. 12k tourists). We have researched beaches and believe that Sapphire beach sounds perfect (less people, beautiful, snorkeling, etc).

 

We are looking for recommendations on what is near Sapphire Beach, such as where to eat lunch, best places to go shopping, other areas we should hit up, etc? Our ages range from 23 - 60 so we are up for anything.
