Similar tour at port vs. Disney's booked excursion?

We are looking at doing the Grand Cayman Island Tour through Disney ($39pp) there are 4 of us.

 

On their website it states....

 

Be sure to wear comfortable walking shoes on this excursion, which includes extensive walking.

 

The stops at the rock formations and the Turtle Farm will be approximately 20-30 minutes each.

 

Transport is via an air-conditioned mini-bus.

 

I have a few questions. I have a knee & foot injury (same leg), do you know how much this "extensive walking" includes? How much? How long?

 

We want to go to Hell (we know it's just a novelty thing and won't need to spend a bunch of time there. But we would like to get some photos, grab a few postcards)

 

But I'm sure we'd want to spend more than 20/30 minutes at the Turtle Farm. 30mins just doesn't seem to be enough time.

 

Anyhow, would there be a way to get this same type of land tour by a private tour guide/company? Should we book ahead of time or will there be someone at the port willing to take us? Suggestions on who to use? Prices?
