Regarding the onshore trips what is the best way of doing a trip without paying Cruise Company prices ? I noticed on certain threads people keep mentioning roll calls, what are these ? Probably your best alternative to to do exactly what you're doing - go to the roll calls. A lot of people set up independent tours and invite other to come along and share the cost via the roll calls.
