I was wondering if all excursions booked through Princess begin and end at the dock/ship or do you need to arrange transport to the tour provider?

Most if not all excursions begin dockside where you will be met and guided to your transport. You will not need to arrange your own transport to the start of the excursion. Sometimes an excursion will end in "town" near the pier to allow time for shopping, etc., on your own and you will then be responsible for getting back to the ship on your own in a timely manner (i.e., back to the ship 1/2 hour prior to sailing).

They will begin and end at the ship. On some you will have the option of leaving the tour and making your way back to the ship. For instance, a tour's last stop might be the shopping area. Some will get on the bus and ride back to the ship. Others may want more time shopping, so they would stay and arrange their own way back.
