You just need to be able, between you, to pull and carry all of your bags at the same time, so you don't have to do any shuttling back and forth to a stash of bags at any point. You might want to have a think about where you will stay, and how you would get to Liverpool Street station from there. If you are fairly central, it would probably be easiest just to get a taxi - but I suspect you'd need two, with one adult in each cab. I've never taken a cruise ship from Harwich, but I understand that it's pretty much the same place as the Hook of Holland ferries (which I have taken), which have trains timed to connect with them.
