LOCAL FLAVA! Local eats in Southern Caribbean?

Hi! Seeking outrageously good food/restaurant recommendations in So. Carib. (St. Croix, St. Maarten, Antigua, St. Luica, & Barbados) where we can try some "local"/regional type dishes that will blow our mind, and that you cannot typically find in the states. What food did you have that you dream about having again? that you crave? that you dream about? what places had amazingly fun/cool ambiance or views?? Open to anything & everytiiiiing. THANKS!:D

I really enjoyed going food shopping in St. Maarten. It's a great place to pick up some tasty goodies to take home! We took a water taxi into town (Philipsburg) and walked to Back street and took a local bus to the recommended grocery store, Grand Marche.

 

They have a ton of Dutch and Indonesian goodies there and also alcohol for a decent price since it is not a tourist place.
