Excursion question

I am a first time cruiser and am wondering about the excursions. I am sailing on the Grandeur in September. If we are to arrive at a port at 10 AM what time is realistic to expect to be off the ship and ready for shore excrsions? Thanks for your help.

Does it take long for the ship to clear customs at the port and how long would it take to get off the ship for an excursion? We are going to Key West, Cozumel, Freeport and Port Canaveral. Where is the best place for a fishing excursion?

I would do Key West for the fishing. Both times I have gone there the tarpon fishing has been fantastic.:)
