Wine Service in Formal Dining Room?

We're bringing our own bottle of a 1981 Rutherford Hill Cabernet on our cruise, which probably has a lot of sediment in it. This may be a stupid question since it's supposed to be like an up-scale restaurant, but since we've never cruised before I have to ask...does the DR staff strain and decant the wine for you? I'd hate for a great bottle of wine to be ruined.:(
