What is is the best ship for family activities?

Just got back from an NCL cruise and my 3 year old did not care for the kids club (he is really shy). We did, however, like the family activities, like arts and crafts, lego building, etc. The only problem is they only had one or maybe two of these "family activities" a day.

Can anyone recommend a line/ship with lots of activities gear towards families (other than Disney)? And what types of activities did they have?
