Ship time vs. Island time

What's the time situation for a ship leaving from Florida and going to the Western Caribbean?

 

I was e-mailing a place in Cozumel about planning an excursion, and they noted the times were "Central Time". I remembered reading here that the ship sometimes quotes its arrival and departure times in a consistent time, based on its home port (i.e., always Eastern Time if it leaves from the East Coast).

This is correct....Ill never forget Captain Sven Petterson on the Voyager of the Seas reminding all passangers to "stay on ships time" in a heavy norwegian accent
