Western Caribbean in January

Trying to get all our excursions booked for our Western Caribbean cruise on the Star in January. Already have Peat Taylor in Jamaica booked, but still uncertain about Grand Cayman and Cozumel. The plan is to book everything privately. How early should I have everything booked? Any suggestions for what tour company for Cayman. We have just a half day there and definately want to do Stingray City. We don't arrive until noon and leave at 6:30. Of course, we want to do as much as possible in the time we have. Is there a time difference between ship time and island time. I have read several things about this and am a little confused. The plan in Cozumel is to rent a jeep and do our own thing. Not sure what port we will be at so is it really necessary to rent the jeep ahead of time. Thanks for all your suggestions.

Just returned from Western Caribbean on the Mariner. Do not miss Stingray City!! Great fun for all ages. We did Nativeway's Reef, Rays & Rum Point tour and would highly recommend it (but came close to missing the ship...be certain your tour guides know when your last tender departs island time...we were delayed by aiding a disabled boat from another company). Did a dune buggy/snorkeling/beach excursion in Cozumel...terrific.

So nervous about missing the ship!! But I think we want to book the Rays, Reefs, & Rum Point excursion!! How close were you in making it back? You can call the ship to lett them know you're running late, right? Will they actually wait for you??
