What nights to book specialty dining?

Hi,

 

We're sailing for a week on the Oasis of the Seas, Eastern Caribbean in April. I'd like to book a couple of dinners at the specialty restaurants. How would I know the best nights to book these in advance?

 

I don't want to miss the lobster dinner, which I've read is the second formal night - but how do I even know which nights are the formal nights?

 

Are there any other "don't miss" dinners in the main dining room? Ideally I'd like to look at the dinner menu for each night and then pick two that I don't mind missing. Is it possible to see the menus in advance?

I'm not sure if this is correct still, but I did find these menus on the royal website I just can't remember where..lol Anyways it matches what is listed here.

Sorry the order I found was Mojo,Saffron,Pimiento, ****ake,Jasmine,Basil,Pomodoro.....so the menus are right but the days are mixed up on this thread
