I'm sorry. I don't know who does private tours for the dolphin swims there. However, if you are also going to Cozumel, I would suggest doing the dolphin swim there. I was not impressed with the dolphin encounter/swim facilities in Grand Cayman.

There are two dolphin encounter companies in Cayman, Dolphin Cove and Dolphin Discovery. Due to contract restrictions they typically will not accept private bookings for passengers coming off a ship where they have an excursion contract with that ship. (If your ship has a contract with operator #1, then that operator won't accept private bookings for passengers from your ship.)

 

You could check with the other company about their offerings for a direct booking.

 

I don't recommend failing to disclose you are coming off a cruise ship. That fact generally gives you a more generous cancellation policy. Not like you can easily postpone your dolphin swim for one day!
