True, but 2 things to consider:

 

- Only some ships have trundles available. The OP's ship may not.

 

- Even if a ship has trundles, the cruise line may not make them available to certain cabins because that may violate the maximum number of passengers allowed in that section of the ship due to lifeboat capacity.

 

That doesn't stop the OP's kids from

sleeping in the interior cabin any way they want, but Carnival will not facilitate a 3rd bed if the above referenced limitation will be exceeded.

I solved this one trip by bringing a twin size air mattress. A little bulky to pack, but it worked. In our case though, there was a Pullman, but no one wanted to climb up.
