2nd visit to Gibraltar: ideas?

How long is your port visit?

Taking a bus to the Spanish border, crossing on foot & renting a (pre-booked) car in La Linea is an option but only if you have a long day - many port-of-call visits to Gib are half-day. The white Moorish town of Ronda is about 90 minutes away (& a pleasant drive), or the walled Moorish town of Tarifa on the Atlantic coast is under an hour. But add an hour to collect the car & the same to return it. Do not rent a car in Gib, the border crossing for cars often involves huge delays.

Consider the World War 11 tunnels (not the same as the Great Siege Tunnels, which are usually included in upper Rock tours). The entrance is just beyond the Moorish Castle, uphill from Casemates Square.

Or the minor sights at the far end of Main Street, such as the little Trafalgar cemetery & Governors House. Tie them in with a couple of pubs & shop-browsing for a lazy day.

Or, if it's in-season, a dolphin-watching boat ride, usually offered as a ship's excursion.

Or there are a couple of small beaches on the Mediterranean side, one at Caleta Bay (a bar nearby) & the other near the end of the airport runway (I don't think it has any facilities). Both are a short taxi ride, though you could negotiate for a route which circumnavigates the Rock at sea-level, via Europa Point which is the most southerly point.

IMHO it's not worth crossing the border to explore La Linea, it's a rather uninteresting town.
