Which side is better? Or closer to the stairs/elevator?

Neither. Elevators are in middle stairs are aft and fwd down each side of elevators. If you are on Port side going out you will see the ocean and starboard side Miami as it turns dark. We have spent most of our times on the upper deck after departure anyway and were asleep when arriving in port at 6AM. Get on board, have a nice leisurely lunch by the pool and then watch castoff from the upper decks and wave like mad.

Either/or....the Captain will try and give equal time to each side in port.
