Ship Time/dune Buggy Tour

We are going to be in Cozumel on the Gradeur of the Seas on 12/19/05. We are scheduled to be in port from 7-4. Most of the dune buggy tours end around 4 p.m. I found one operator that will bring us back to the ship early. I want to be back no later than 3 p.m. to be safe. My question is this:

 

Cozumel is on CST. Does the ship 7-4 time reflect EST (we leave from Tampa) or do they adjust the clocks to CST once we enter that time zone? I don't want to cut our excursion too short if I don't have to.

All cruise lines could differ. We were in Cozumel twice, but our ship did not leave until 11:00 pm, Disney Magic. We did not change our clocks, and yes it did get confusing, would have rather changed time in the middle of the night.
