Our family is cruising out of Bayonne this summer and our kids are fans of the tv show, Cake Boss - they would love to visit Carlo's bakery! my husband says that looking at the map it doesn't appear that it is too far away from the port, but we are unsure how difficult or easy it would be to get to with traffick, etc. as we have never traveled to this area. Does anyone have any insight? Thank you!

What day of the week and about what time?

According to Google maps Carlo's Bakery is only 8 miles from Bayonne but at that time of day it might take 30 - 45 minutes in traffic.

And then once you get there, you probably won't be able to find a parking spot nearby since parking in Hoboken is highly restricted. And even if you do - Carlo's, as a retail bakery, IMO, is completely over-rated. Go if you must, but be forewarned.

After we disembark (around 9:00) on a Thursday.

That's at the end of rush hour but things could still be busy. You should be able to do it in 30 to 45 min. You get on the turnpike and go towards the Holland Tunnel. I would get off at exit 14B and follow the Google directions on route 612, Johnston, Pacific and Grand to get to Marin Blvd. Your objective is to get into Hoboken by crossing the Holland Tunnel access roads (12th and 14th streets). If you stay on the turnpike, you could get hung up in a traffic jam on the tunnel access road. I did something similar in March to sneak into the tunnel from Marin Blvd. and it worked well.

Take the Hudson-Bergen Light rail from Bayonne to Hoboken, walk through Hoboken terminal and out on to the street, it's about a 4 block walk to the bakery. You can leave the car in the light rail parking lot at 34th St in Bayonne or you can drive to Liberty State park and use that park & ride.

Get off the light rail, walk through Hoboken Station out to River Street. Walk one block up River Street to Newark Street, and turn left. Walk 3 blocks up Newark Street to Washington Street, and turn right; Carlo's is on that block at 95 Washington Street.

This is good advice. Hoboken is not car friendly. After you go to Carlo's walk over to Sinatra Dr. (2-3 blocks) and take a look at the NYC skyline. Breathtaking.
