Cocktails - Spirt upgrades

Outside of Alchemy bar, I suspect most cocktails on the menus are made with bottom/middle shelf spirits.

 

If you were to substitute out for top shelf spirits, on which cocktails would you upgrade, and which top shelf would you ask to be used instead?

Grey Goose XV vodka is pretty good, but I was drinking vodka tonics. And it's $15 a shot.
