Sorry, can't suggest any tour operators in Cadiz.

But your trip can be done independently by train. Station is right by the port in Cadiz, a five minute walk if your ship is berthed on the east quay or up to 20 mins if it's berthed on the opposite side. From Jerez station to the eschuela is a fair walk or a short taxi ride. If you arrive too early for the show, there's plenty to see at the eschuela (eg the carriage museum) in the meantime.

 

Or you could seek sharers via your RollCall for sharers for a private transfer or car rental (rental agency at Cadiz rail station).

 

There are a number of sherry bodegas in the town, the Sandeman one is just a couple of hundred yards from the eschuela. But be aware that sherry is no longer produced in these historic town centre bodegas, it has moved to modern wineries (more like factories) on the outskirts and the old town bodegas are now merely for tours.
