Gluten free at the specialty restaurants

I know that Guys can do gluten free buns, and the Chef's table accommodates gluten free, but what about Iguana, the Cucina, sushi, etc? Does anyone have experience with eating gluten free at the specialty restaurants?

Cucina can accommodate gluten free. We went there with my mother in December, and she is gluten free. They brought her gluten free bread (to go with the delicious ricotta!) and they were able to make her the pasta she wanted, but they had to sub gluten free spaghetti for the penne. They don't have all shapes of pasta in gluten free - just spaghetti noodles. I don't remember which dessert she got, but she was able to get a gluten free one. I do recall that you could not get the Tiramisu gluten free.

She's also eaten at the steakhouse with no problems.

Not sure on Blue Iguana - I would imagine you get the burrito insides without the tortilla though!
