Couple of NCL questions including "walking" a courtesy hold

1) Haven't been on NCL since last June. What have been the major changes in the last six months? Policy changes, upcharges, internet, food quality? I'll be on Escape, possibly.

 

(Side note: I tried RCL for the first time last fall. Holy cow, it is NOT for me.)

 

2) Has anyone ever "walked" a courtesy hold forward a few days before real booking? I expected to book a cruise today that's already after PIF, but my boss unexpectedly wants to chat before approving the time off (this is new). I'm basically just trying to hold onto a room for two days till I can clear it on Monday, nothing major.
