We were in Martinique in December and found the currency of choice was the Euro. Dollars were accepted in some places but not everywhere. I would assume that Guadalupe would be similar. Where the dollar was accepted, our experience was the price quoted, for example on the ferry from port to the beach, was the same for US$ and €.
