Fish spices

We have something in Barbados called Green Seasoning. It's a mixture of Garlic, Tyme, shallots (including the green parts), Marjoram and pepper. It's usually wet to the touch and is put into almost every meat under the sun. in fish it can be rubbed on or put into a slit in the meat (if it's a steak of fish).

 

If you are talking about breading for fried fish, I usually will only use bread crumbs to which I add garlic, salt and something called complete seasoning which has probably the same spices as the green seasoning, just in a dry form.

 

We also like using olive oil garlic and ginger and either quickly pan sear or cook it on the grill.

The Green Seasoning or Bajan Seasoning as it is also called can be bought from most Supermarkets and maybe some souvenir shops. As sunniebgi indicated it can be used for almost any meat under the sun.

 

I am a HUGE flying fish fan and you can also prepare an egg wash...you can put the bajan seasoning in and mix it all up...dip the fish in the batter and fry it up and you have an EXTREMELY delicious delicacy.
