Debarkation Advice Needed

After completing the Western Mediterranean on the Epic, we will debark in Rome.  It is my understanding that most passengers on this cruise start and conclude in Barcelona.  I have a few questions for anyone who has taken this cruise in the past.

1)  It is my understanding that we can "walk off" as early as 6:00 AM or as late as 8:00 AM.  Can we leave later than 8:00 to avoid the crowds getting off to spend the day in Rome?

2)  We are hiring a car service to take us from the port to Rome.  I need to get an idea of the time it takes to get through customs at the port to let the service know when to pick us up.
