You can always cancel them for a refund if you change your mind. Same goes for the package (although I don't believe you can cancel the package once on board). You may have to pay when you book the reservation, package, excursion, etc., but there's no commitment until it closes a day or two before the cruise. You always can cancel for a full refund.
