Visiting Nassau on 12/29, my husband, myself, and our 3 kids. We want to do the Blue Lagoon Deluxe Beach Break. My husband and one of our kids also wants to do the dolphin encounter. I see a separate excursion for the dolphin encounter and beach break. I called RCCL as well as Blue Lagoon and neither could give me a solid answer: Do we need to book both excursions for the two of us that want to do the dolphin thing and be able to stay at the beach all day?

No, if you want to do the dolphin encounter, you do not need to also book the beach break.  When you arrive they will direct you to the beach and then you will have a time to show up for the dolphin encounter.  You will arrive and leave on the same boat as the beach break people.  Depending on how long you are in port, don't expect a lot of time at the beach with the dolphin encounter, they make sure your return boat gets you back in plenty of time and the trip to the port is ~30 minutes.
