I'm wondering the actual benefit in booking a taxi tour ahead of actually getting to the island.

There are some very highly reccommended taxi/tour guides on the port boards.

but, it seems like you could make a better deal at the pier.

we have always just made an arrangement at the port pier, and only once did we get a bad tour.

so anyone? insights here are appreciated.

We have always negotiated a tour at the pier, there are usually lots of taxis ready to go. You can get a better deal, and sometimes we hook up with another couple if it is a van and cut down on the cost.
