Galveston post cruise time killer?

We get off the Liberty this Sunday. 

 

Our flight isn't until 5ish out of IAH. 

 

Any thoughts on what we can do to kill a few hours? 

 

2 things to consider.. 

 

1. My mom doesn't walk too well. 

2. We'll have our luggage with us.

Sorry that nobody responded earlier but you should check to see if Carnival has a post-cruise excursion with airport transfer.  I've done this elsewhere and not something Id normally consider but it was a decent way to kill the time without handling luggage
