Fairmont Airport, and also I believe the Waterfront, plus the Hyatt are the only ones that spring to mind - but they are NOT cheap!

Not familiar with YVR but are leaning toward the hotel right at the airport.  Is this hotel before or after security?  Can we walk around the airport while staying in a day room?

It's before Security, so you can walk around a fair chunk of the airport and experience a range of overpriced and mediocre dining options (the hotel is the only 'fine dining' establishment), or watch planes take off and land if that's your thing. Personally I'd check out the public art at YVR, each large piece/gallery is listed here - click the names individually and it will confirm where they're located, by level/terminal/pre- or post-security
