Is there a noticeable difference in the crowds in Italy, Spain and Greece between April and May?

I have been on 4 cruises to Europe, all in September and October.

 

I am going on a cruise for my 60th BD (ok, 2 cruises, I always wanted to do a B2B).  I'm not concerned about the weather, I just would prefer less crowds.  lol

 

I plan to avoid the 2 weeks after Easter, so it would be 4/19 to 5/9 (Epic), 5/5 to 5/26 (Escape) or 5/9 to 5/27 (Pearl).  I have not decided on which ship yet, trying to get a last minute deal.  

 

I do have another option of 4/24 to 5/16 (Escape), but thought that would be difficult as it ends in Trieste.  I have checked flights and it is difficult to find one in the early afternoon that is affordable.

 

I have already been on the Epic, and except for the tiny toilet area, I liked the ship. lol
