Santo Tomás. Is pre-booking excursion necessary?

Hello, 

We are in port in December and not sure if we want to do a shore excursion or stay on the ship. From what I've read, the tour companies (Go with Gus or Happy Fish) are available to book excursions day of, right at the pier.
For those of you that know, is it reasonable to expect that we could simply book an excursion that day?
