Specialty 3 night special or MDR and Buffet?

I am doing my first cruise longer than 7 days in many years.  I have 11 nights on Jewel of the Seas in November.  I was thinking with all those nights and the food not quite as good as before, that I was get the 3 meal plan.  I usually don't get the steak or the Mexican food, both for same reason.  I live in south central Texas and can get all that food at a much high quality. (on my last cruise waiter was Mr. Pat it is sirloin night.  I asked how many of the chefs grew up in beef country and how many in India, he said Ok Mr. Pat Curry lamb for you.  This cruise has great alternatives to the stake and Mexican.  I used an OBC to get package.  But I have other ways to use that.  

 

I like the same table with same staff for dinner.  I don't like that i can pay for specialty restaurants now and reserve a time, 2 months out, but have to wait till I'm on the ship to book these meals as part of a package.  I am worried that I will not get the early times that I prefer!

 

Thoughts... are the specialties really that good?  Is it worth having to run on to ship and book first thing?
