can you tell if you know what is on the menu before you go in. Is it dsplayed somewhere?

yes the menus are posted that afternoon outside the restaurant, im sure if you asked, they will deliver a menu to your cabin beforehand. princess did it for me. also saves you a lot of time, and you get done sooner

Not only are they posted every morning outside the dining room but for most ships you can search around the web and find them posted day-by-day there. Then you can check each one out and find out if there might be a particular evening you aren't fond of and should therefore make a dinner reservation in one of the alternative dining venues.
