I've done the trip a number of times and enjoyed every time. I'd recommend it very highly.

 

You can also do a shorter version in a WW2 amphibious vehicle - it's called something like duck tours. A google search should find it. You might get wet though......

Some of the museums and many of the stores in Mayfair are closed on Sundays, and many of the tourist attractions also have very short hours on Sundays.
I'm as mystified by this as Kindlychap. Most shops in central London are open on Sundays. Just about every museum is open on Sundays - it's one of their busiest days of the week, for obvious reasons. There are some limits to sightseeing in cathedrals and churches on Sundays, for obvious reasons - but they're also open.

 

One thing, however, that is good in Greenwich is the market, which is only open at the weekends.
