We were there last week. We had a 4:30 sailing (on Carnival Victory) but had to be in line by 3:30. Some other ships only had to be back 1/2 hour before. You may want to check with your cruiseline to see if they stay on ship time (the time from where you got on the ship.) We went out of Miami and were on Eastern daylight time. Grand Cayman is on Eastern time but not daylight, so they were an hour behind us. This will impact your excursion times.
