Need Caribbean Recipes

We are taking mom on her first cruise next summer, and are spending this weekend with her,(we live in different states) so we will be at her house the day the one year count down begins. Our cruise is a 4 day Caribbean on the Sovereign so what I would like to do is make a Caribbean themed dinner tomorrow night (this was one of the fantastic suggestions I recieved from another thread I started about keeping up the excitement when your cruise is sooo far away...thank you CC!). Any recipes or other ideas to share?

Sorry, I just saw your question. Since it's almost 6pm on Sunday, I guess my recipes won't help.;)

Dinner was a great success and we had a fantastic time talking about the cruise and making plans. Thanks again for all the great input.

 

Cotton:Feel free to post them anyhow, gotta have something to hang on to for the next 12 months!

 

This wait is gonna drive me (and every poor soul that has to listen to me go on and on about it) crazy! :D
